The ORAC (Oxygen Radical Absorbance Capacity) unit, ORAC value, or “ORAC score” is a method of measuring the antioxidant capacity of different foods and supplements. The ORAC value of black garlic is high three times as much as blueberry and four times as much as soy.

What is ORAC?
ORAC stands for Oxygen Radical Absorbance Capacity. It's a lab test that attempts to quantify the "total antioxidant capacity" (TAC) of a food by placing a sample of the food in a test tube, along with certain molecules that generate free radical activity and certain other molecules that are vulnerable to oxidation. More than two decades in the making, it was developed by scientists working at the National Institutes of Health (NIH) and USDA. While the exact relationship between the ORAC value of a food and its health benefit has not been established, many scientists believe that foods higher on the ORAC scale will more effectively neutralize free radicals. Although unproven, according to the free-radical theory of aging, this may slow the oxidative processes and free radical damage that can contribute to age-related degeneration and disease.

Black garlic’s ORAC Value 

With a very high ORAC antioxidant value of 19600 orac units, Black Garlic is at the very top of this new food class. The graph is shown that The ORAC value of black garlic is high three times as much as blueberry and four times as much as soy.  Black garlic is than twice the antioxidants of normal garlic for a start. After fermenting, black garlic has disease fighting antioxidants and super scavenger SOD compounds all greatly increase well beyond the levels of fresh garlic and many other so called ‘super foods’.
